Never mind the creamy mashed potatoes on the back burner. I'm back on track after eating up everything over the holidays. So, I don't have time for High Carb Distractions.
Today, It's all about Spinach and I Love Spinach!!!! I prefer fresh, but I'll take it anyway I can get it. I could eat the stuff everyday. This edible flowering plant is an excellent source of fiber and water, which keep your digestive system in check. 😆

Simply seasoned with salt and pepper, these salmon fillets are pan seared to perfection! For an extra treat, add capers, and/or garnish with lemon slices. Directions Prep 10 m * Cook 10 m * Ready In 20 m Preheat a large heavy skillet over medium heat for 3 minutes. Coat salmon with olive oil. Place in skillet, and increase heat to high. Cook for 3 minutes. Sprinkle with capers, and salt and pepper. Turn salmon over, and cook for 5 minutes, or until browned. Salmon is done
